  • Instant Pizza
  • Bread Pakoda (Indian Recipe)
  • Baked French Toast Sticks
  • Cauliflower Bread Sticks and Marinara

1# Grilled Cheese with Tomato and Pickles

Grilled Cheese with Tomatoes and Pickles makes one, easily doubled, tripled... 2 pieces of gluten-free bread(or regular if you can eat the stuff) approximately 1/4 cup vegan cheese(we used Teese mozzarella) 1 thin slice of tomato 6-8 bread and butter pickle slices(we used Bubbies) Earth Balance Place the bread side by side on a plate, and sprinkle evenly with cheese. Microwave for 30 seconds, or until cheese is melted. On one slice, place the sliced tomato on top of the cheese. On the other piece, place the pickles in one layer on the cheese. Place a piece of Earth Balance in the center of a small skillet and turn to medium heat. Place the piece of bread with the pickles on it, pickles side up, in the center of the skillet(on top of the Earth Balance). Carefully place the other piece of bread, tomato side down, on top of the pickles. Cook for approximately 5 minutes, or until lightly browned. Carefully flip, and cook an additional 5 minutes. Remove from heat. Enjoy!

3# Bread Pakoda (Indian Recipe)
This is what u'll need.... Besan / Gram Flour - 1/2 cup Bread - 4 slices Red chilli powder - 1/2 tspn Jeera / Cumin powder - 1/2 tspn Hing / Asafoetida - a pinch Oil for frying Salt to taste Here is the stir.... Take a small working bowl and add besan to it Sprinkle in all the dry powders - red chilli powder, jeera powder, hing and salt. Add little water to it and mix everything together to form a thin batter. Well it should be little thinner than dosa batter consistency. Whisk it around for a minute or so to remove any lumps and to make sure the spices blend together evenly Cut each bread slice into four pieces or you can also try cutting diagonally to make 2 triangles. Cut all the slices and keep them ready Heat oil in a kadai. Make sure oil is at right temperature. You dont want it to be too hot as it will make under-cooked pakodas. If the oil is not hot enough then there are chances that pakodas will stick to the bottom or drink u a lot of oil. As soon as you drop the pakodas they must sizzle up to the top When oil is ready dip a piece of bread into the batter and then slide it into the oil. Drop in any many pieces that might fit into your pan Let it cook for some time. Flip it over to cook on the other side too When done remove from oil and drain them on paper towels Serve hot with ketchup or chutney Note: Fry them at right temperature to avoid burning the food or under-cooking it Added as per friends request : If you feel your pakodas are too thick/heavy then try adding a little more water. If you feel they are not puffing up then try adding a pinch of baking powder. I never had any such issues so I never bother adding baking powder. But I have heard many people adding it so I am sure it will work in case you need i

4# Baked French Toast Sticks

5# Cauliflower Bread Sticks and Marinara
Ingredients 1 cup raw cauliflower, grated 1 large egg 1 cup mozzarella, divided garlic salt and Italian seasoning, to taste 1/2 cup tomatoes, diced coconut oil (to grease pan) Directions Preheat oven to 350°F. Puree diced tomatoes in a small chopper. Set aside. This is the marinara sauce. Mix cauliflower, egg, and 3/4 cup shredded mozzarella together in a bowl until combined. Place a piece of parchment paper inside a 9"x13" baking pan with the sides sticking up a bit. Lightly grease the parchment with coconut oil. Pour mixture into baking pan and spread. The mixture does not have to reach the entire pan. It should be about 1 1/2 inches thick. Bake for 30 minutes or until set. Lift the parchment paper by the sides and remove from baking pan and place on a cookie sheet. Gently use a spatula to lift all edges of the bread off the parchment so that you are able to flip it easily. Increase the oven temperature to 450°F and bake for another 10-15 minutes. Cut the bread into sections to resemble sticks (a pizza cutter works well). Sprinkle garlic salt, Italian seasoning, and cheese over the top. Bake at 450°F until cheese is melted, about another 10-15 minutes. Serve with marinara. Enjoy!
